Baby, it's cold outside!!! ❄️ And being here in Nashville, where temps have been steady in the 20's and 30's, I realize my friends even further north are enduring even COLDER temps! (Side note: how do you do it, living where the air hurts your face? My blood has totally thinned moving from the Hoosier state to South FL, then moving to the happy medium of Middle TN!)
Anyway, tis the season for hot meals to warm you up and fill your tummies, and unfortunately, with that comes an uptick of "crud" - so much nose-blowing, coughing, sneezing, and more going on already. Our house is on the tail end of almost three- THREE!- weeks of the cruddy virus. So I whipped up this delicious, immune system supporting soup to ease symptoms, keep us cozy and sustain our immune systems. It's SO easy!
Easy PALEO & AIP Chicken and Vegetable Soup
1/2-3/4 lb organic chicken, baked/boiled and cut into shreds
3 stalks organic celery, chopped
1 organic yellow onion, peeled and diced
5 organic whole carrots, thinly sliced
2 Tbsp organic coconut oil
3 cloves garlic, diced
2 containers organic chicken stock or broth (64 oz)
1/2 tsp turmeric powder
Sea salt and pepper to taste
In a large pot, melt coconut oil on medium heat. Add in onion, garlic and turmeric, sauteing until translucent. Add in carrots and celery, cover on medium heat for 10-15 minutes, stirring occasionally until vegetables are softened.
Add in chicken, chicken stock/broth and sea salt and pepper.
Let simmer on low heat for 4-6 hrs or until vegetables can be pierced easily with a fork.
Bonus: add in fresh herbs of your choice- parsley, basil, thyme, savory are all delicious and add extra dimensions of flavor. Adding in a couple of Tbsp of apple cider vinegar and/or 2-3 scoops of pure bone broth protein powder or plain collagen powder ups the immune support.
Double bonus: Serve with crackers (we love almond flour-based Simple Mills!) or chips (we love Plant Snacks and Siete variety!).
