GF/DF Almond Flour Pancakes (with option to add collagen/bone broth protein!)

Oh pancakes, how do I love thee? Let me count the ways.....

When we made the switch to Paleo and Autoimmune Paleo eating, finding ways to still enjoy the occasional "bread-y" dish was one of my first initiatives. Since gluten-free is pretty essential for us, my hero flour has become almond flour. These fluffy beauties take almond flour, a bit of almond/coconut milk, and a small handful of other ingredients to present you with fluffy, delicious pancakes! The variations are endless, too, which is why I love it.

My favorite addition to the batter is currently Multi-Collagen Protein by Ancient Nutrition (unflavored). My other favorites are their Bone Broth Proteins (as they are whey-free, soy-free, free of all the allergens we have to avoid)- Vanilla, Banana Creme and Cinnamon Apple are all incredible in this batter, too. (Note: I am an Event Producer for Ancient Nutrition and while I freaking LOVE their products, I am NOT paid to promote or suggest their products. Just needed to throw in that disclaimer... wink.)

So, let's get to it.... these are best mixed in a blender or Cuisinart but can be mixed in one bowl by hand it you're in a pinch.

 

 

My FAVORITE GF/DF Almond Flour Pancakes!!

Ingredients:

3 pastured eggs

1/4 cup almond or coconut milk

pinch of sea salt or Himalayan salt

1/2 tsp baking soda

1/2 tsp organic apple cider vinegar

1 1/2 cups gluten-free blanched almond flour (gives best texture and fluff)

1/2 tsp organic vanilla extract

1 Tbsp melted organic coconut oil

1/2 tsp organic stevia (or if you can do honey or maple syrup, boost to 1 Tbsp)

BONUS: If you want to add oomph to these babies with protein or collagen, add 1- 1 1/2 scoops of your preference into the batter.

Blend on batter setting in blender or mix vigorously in bowl. We love our griddle because I can do more pancakes in less time (usually our 4 yr old and I are hangry first thing and I need to get them done RIGHTNOW). Batter will be thicker so smooth into round shapes on griddle- set the heat around 115-125 degrees F, let sit for 1-2 minutes, then flip, let sit another 1-2 minutes and take off.

If you're extra like me and love putting goodies inside your pancakes, fresh organic blueberries, Lily's stevia-sweetened chocolate chips (or Enjoy Life vegan chocolate chips if you can do sugar) are a great addition.

Top with organic grass-fed butter, ghee, coconut oil or whatever you choose. As you can see, I like putting lots of things on top of my 'cakes.
